Almond Butter Jam Pancake Poppers

Anyone else eat jelly filled donuts as a kid? Well this Almond Butter Jam Pancake Bites recipe from Natalie Thomas of @feastingonfruit is even better! 

Almond Butter Jam Pancake Poppers  

Gluten-Free

Ingredients:

1 cup Purely Elizabeth Ancient Grain Pancake Mix  

1/4 cup almond butter 

2 tbsp almond milk 

2 tbsp maple syrup 

2 tbsp coconut oil 

2 eggs or 2 flax eggs 

1/4 cup jam of choice 

Instructions:

Preheat the oven to 350ºF. Mix together all the ingredients except the jam. Drop a spoonful of batter into each mini muffin (greased), filling 1/3 of the way. Place about 1/2 teaspoon of jam into the center of each. Top with more batter until filled almost to the top of the pan (makes 18). Bake for 12-15 minutes at 350ºF. Cool for 10 minutes before removing from the pan. Eat!
