Apple Oatmeal Breakfast Muffins

A morning muffin packed with nutritional benefits to keep you full until lunch. These apple muffins are made with applesauce and our Apple Cinnamon Pecan Superfood Oatmeal that is made with dried apples, chopped pecans, chia, flax, amaranth and quinoa. 

Ingredients you will need to make these Apple Oatmeal Breakfast Muffins: 

Oats: Using our Apple Cinnamon Pecan Superfood Oatmeal Pouch, you can whip up a batch of these apple muffins in no time!

Oat Flour: The additional of the oat flour helps bind the muffins and create the fluffy muffin texture. Oat flour is a great gluten-free baking flour. 

Cinnamon: Packed with antioxidant and anti-inflammatory benefits, this flavor bomb of a spice is the ideal pairing with apples. 

Baking Powder + Baking Soda: Leavening is essential for baking muffins. 

Sea Salt:  Salt balances the overall flavor profile and brings out the interesting unique profiles of the apples, cinnamon and sugar. 

Coconut Oil: These are made with coconut oil to make them plant-based. The coconut oil gives a creamy, buttery flavor without using dairy. 

Coconut Sugar: Our favorite sweetener, we love the rich, dark flavor profile coconut sugar gives to a baking recipe. 

Applesauce: Adding the flavor and moist texture, applesauce is a great ingredient to use in dairy free baking. 

Vanilla Extract: Added flavor to round out the muffins. 

Eggs: Adding structure, bind and protein to these muffins. Eggs make muffins light and airy. 

Apples: The fresh shredded apples give even more apple flavor and a delicious fruit texture in every bite. 

INGREDIENTS

 Muffins 
¾ cup Purely Elizabeth Apple Cinnamon Pecan Superfood Oatmeal Pouch
1 cup oat flour
2 tsp cinnamon
2 tsp baking powder
½ tsp baking soda
½ tsp sea salt
½ cup coconut oil, melted
½ cup coconut sugar
½ cup applesauce, plain and unsweetened)
1 tsp vanilla extract
2 eggs
1 cup finely shredded apples (Granny Smith, Gala or Fuji)Cinnamon Sugar Topping
2 tbsp coconut sugar
¼ tsp cinnamon

 Cinnamon Sugar Topping 
2 tbsp coconut sugar
¼ tsp cinnamon

DIRECTIONS

1. Preheat oven to 350°F and line a muffin tin with muffin lines (or coat muffin tins with coconut oil)
2. In a small mixing bowl, mix together the oat flour, oats, cinnamon, baking powder, baking soda and salt.
3. In a large mixing bowl, add your melted coconut oil, sugar and applesauce and whisk together until well combined. Add in your vanilla and eggs, whisk until just combined.
4. Pour the dry ingredients into your wet ingredients and stir together until just combined. Add your shredded apples to the batter and gently incorporate without overmixing. Fill each muffin tin about ¾ of the way full. You should have 12 muffins.
5. In a small bowl, mix together the coconut sugar and cinnamon and sprinkle over the muffins evenly.6.Bake in the oven for13-17 minutes or until the top of the muffins spring back to the touch and toothpick inserted comes out clean.
