Grain-Free Banana Chai Donuts
grain-free // vegan // gluten-free
Our new Bread + Muffin Mix is also great for DONUTS! @the.fit.peach spiced up this recipe with banana and chai for the perfect breakfast pastry.
Ingredients
1 cup mashed bananas (approx. 2 bananas)
1/4 cup coconut oil (melted & cooled)
2 eggs
1 tsp vanilla
3/4 cup water
1 package Purely Elizabeth Bread & Muffin Mix
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1/2 tsp cloves
1/4 tsp ginger
Maple Glaze Ingredients
1/4 cup maple syrup
1 Tbsp coconut oil
1 cup organic powdered sugar
Directions
1. Preheat oven to 350 F. In a mixing bowl, beat the mashed bananas, coconut oil, and eggs together. Add the vanilla and water and continue to mix well
2. Fold in the Purely Elizabeth Bread & Muffin Mix, cinnamon, nutmeg, allspice, cloves, and ginger until no flour clumps remain
3. Pour batter into a donut pan greased with oil and bake for 17 - 20 minutes; let cool before icing
4. While donuts are cooling, prepare the glaze by heating the maple syrup and coconut oil in a saucepan over medium-low heat until the coconut oil is melted. Add the powdered sugar and stir to break up any sugar clumps
5. Dip the top half of each donut in the glaze and let cool on a wire rack
