Bananas + Oatmeal, is there a better combination?! The sweetness of the bananas, coconut milk and addition of medjool dates are a flavor bomb in this very simple and delicious oatmeal bowl. While this can be eaten as a breakfast meal, it also tastes delicious as a dessert on a cold winter night.
Ingredients you will need to make Banoffee Oatmeal:
Oats: Using our Banana Nut Multipack, you will get a blend of flax, chia, quinoa and puffed amaranth in every bite.
Coconut Milk: We like the flavor the coconut milk provides in this oatmeal because it gives it a 'Banana Cream Pie' flavor profile. Feel free to use whatever nut milk you prefer.
Banana: While you will get plenty of banana flavor from the oats, we love topping with a fresh banana.
Medjool Date: A natural sweetener, rich in fiber. We love using dates as a sweetener swap in recipes!
Vanilla Extract: Adds extra flavor to the oatmeal.
Gluten-Free Graham Crackers: The crunchy texture offsets the creamy oats and is reminiscent of a graham cracker crust.
Coconut Whipped Cream: If you are feeling fancy, we love making whipped cream out of a can of coconut cream. Coconut yogurt is also a great option!
INGREDIENTS
1 Banana Nut Superfood Oatmeal Multipack With Prebiotic Fiber
½ cup coconut milk, boiling
1 banana
2 medjool dates
½ tsp vanilla extract
½ of 1 gluten free graham cracker
Dollop of coconut whipped cream
DIRECTIONS
1. Place the 2 dates in a cup of boiling water for 5 minutes. Once soft, remove from the water and mash along with ½ of the banana and vanilla extract.
2. Add in the oatmeal packet and boiling coconut milk and stir until well combined.
3. Top with remaining banana, crushed graham crackers, and dollop of coconut whipped cream.
