Caramel Apple Coffee Cake

Anyone who knows me knows I’m not the biggest coffee person, but coffee cake? That’s something I can get behind. @marie.reginato made this Caramel Apple Coffee Cake with our Grain-Free Bread + Muffin (+coffee cake) Mix and it doesn’t disappoint. 

Ingredients
Salted Caramel Sauce:
1/4 cup coconut oil
1/4 cup honey or maple syrup
3 tablespoons peanut butter, unsalted
Pinch of sea salt
Streusel:
1/4 cup coconut sugar
3/4 cup Purely Elizabeth Grain-Free Bread + Muffin Mix
1 teaspoon ground cinnamon
Dash of all-spice
3 tablespoons olive oil
Coffee Cake:
2 cups Purely Elizabeth Grain-Free Bread + Muffin Mix
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon all-spice
3/4 coconut sugar
1/2 cup olive oil
2 eggs, beaten
8 ounces vanilla coconut yogurt, or greek yogurt
1 & 1/2 medium apples, peeled and chopped into bite-size pieces
Pinch of sea salt

Directions
1) Preheat the oven to 350F and grease a loaf pan with extra olive oil.
2) Make the caramel sauce by melting the coconut oil in a saucepan on medium-heat. Turn the heat off and add in the honey, peanut butter, sea salt and whisk well until combined. Pour into a bowl and set aside.
3) In a small bowl, mix together the streusel ingredients and set aside.
4) In a medium size bowl, mix the Purely Elizabeth Grain-Free Bread Muffin Mix, baking powder, baking soda, cinnamon, all-spice and coconut sugar. In another small bowl whisk together the olive oil, eggs, yogurt and sea salt. Pour the wet mixture into the dry and slowly mix to incorporate. Then gently fold in the apple slices.
5) Pour half of the batter into the loaf pan. Top with half of the streusel and drizzle with some of the salted caramel sauce. Now pour the remaining batter on and top with the last bits of the streusel. Bake for 50 minutes - 1 hour, or until a toothpick inserted comes out clean. Let it cool for 10 minutes and then drizzle with the extra salted caramel. Enjoy!
