Kaniwa Soup

…Chickpea, Tomato and Kaniwa Soup…


1 tbsp olive oil

3 cloves garlic, minced

1 onion, chopped

¼ tsp cumin

¼ tsp smoked paprika

1 tbsp balsamic vinegar

1 cup kaniwa, cooked

1 cup vegetable stock

2 tbsp tomato paste

1 can chickpeas, drained and rinsed

28 oz can chopped tomatoes

Himalayan sea salt to taste



Heat olive oil in a large pot over medium heat. Add garlic cloves and spices and sauté until fragrant, 2-3 minutes. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 25 minutes. Serve
