Gluten-Free, Vegan // Makes 4 Ice Cream Sandwiches

An easy ice cream sandwich hack when you're craving something sweet and crunchy!

Chocolate Chip Ice Cream Sandwich

INGREDIENTS

1 bag of Purely Elizabeth Vanilla Chocolate Chip Ancient Grain Granola, crushed into fine pieces
Ice cream of choice (this recipe used Van Leeuwen’s Marionberry Cheesecake)
Cookies of choice

DIRECTIONS

1. Using a sharp serrated knife, cut through the ice cream container, cutting three different slices of ice cream.
2. Place the ice cream slice on the cookie and top with another cookie.
3. Roll in granola and serve.
