Cinnamon Peanut Butter Grain Free Ice Cream Sandwiches

grain-free, gluten-free
Ice Cream of Choice (I used Talenti Vanilla Bean Gelato)
Bake cookies according to instructions on package, cool completely. Once cooled, add 1 scoop of ice cream to a cookie and top with remaining cookie to make sandwich. Press firmly to ensure sandwich forms. Roll sandwich in granola and freeze until ready to eat. Enjoy!
