Coconut Cream Pie Overnight Oats

These Coconut Cream Pie Overnight Oats have *just* the right amount of tropical flavor for a little taste of vacation… perfect for if you're feeling a little cooped up this winter!
Ingredients
1 cup Purely Elizabeth Vanilla Pecan Collagen Protein Oats
2 tsp chia seeds
½ cup coconut yogurt + more for layering if desired
2 tbsp maple syrup
3 tbsp toasted coconut shreds
2 tbsp chopped pecans
1 cup coconut milk
Toppings
Toasted coconut shreds
Pecans
Directions
In a bowl, stir together all the ingredients until well blended. Cover and chill for at least an hour or up to two days. Before serving the oats, add in the coconut milk if needed.
Serve overnight oats with yogurt and toppings.
