I’m such a sucker for a good homemade dip. I recently tried making this Creamy Cashew Avocado Dip with homemade sweet potato fries and it turned out amazing! The best part about this vegan avocado dip is you can make it as spicy as you want.

CREAMY CASHEW AVOCADO DIP

vegan, gluten-free

ingredients

1 1/2 cup raw cashews soaked

1 avocado

1 tsp chipotle powder

1/2 tsp minced garlic

1 tbsp of lime juice or to taste

salt + pepper to taste

1 tbsp olive oil

cilantro

smoked paprika

instructions

Soak raw cashews for at least 2 hours. In a food processor, combine all ingredients and blend on high until creamy consistency. If too thick, option to add water or additional lime juice. Serve topped with cilantro, smoked paprika, olive oil and sea salt. Serve immediately.
