Dreamy Donuts

Sometimes the kitchen is for getting stuff done, and quickly. You know those days– grab a bowl, throw in some yogurt, top with granola, call it a day. But lately we’ve been striving to make time for and appreciate slow creative concoctions. It is so much fun and almost meditative to try out recipes that involve some experimentation and that allow us to PLAY with color + flavor.

Our latest obsession: DREAMY DONUTS.

The Donut Base:

gluten-free, grain-free 1 1/4 cup almond flour 1/4 cup arrowroot flour 1 tbsp chia seeds 1/2 tsp sea salt 1/2 tsp baking soda 1 tsp cinnamon 2 eggs (or use your favorite vegan egg substitute) 1/4 cup coconut milk 1/2 cup coconut sugar 1/4 cup coconut oil, melted Preheat oven to 350°F. Lightly grease donut pan with coconut oil. Combine dry ingredients in a bowl. Meanwhile, in a large bowl, whisk together wet ingredients. Add dry ingredients and stir until well combined. Pour batter into a Ziploc bag with a 1/2" opening. Fill the donut plan. Bake in the oven for 20 minutes. While donuts are cooking, make the glaze. In a small pot, add the glaze ingredients and whisk until melted and well-combined. Set aside. When donuts are cooled, decorate!

Toppings:

All include a base ofSimple Mills Vanilla Frosting. To create the colors, we suggest starting with a tsp of the coloring ingredient and stirring it into 2 tbsp of frosting. Add more color or frosting to tweak and create the desired color.
  1. Matcha Granola Donut: Vanilla Frosting mixed with Matcha Powder + Chlorophyll drops. Top with Maple Walnut Probiotic Granola.
  2. Matcha Ombre Donut: Vanilla Frosting mixed with Matcha Powder + Chlorophyll drops. Increase amount of matcha/chlorophyll to create darker shade as you go.
  3. Coconut Lemon Matcha Donut: On one side, plain Vanilla Frosting topped with Lemon Zest. On the other side use Vanilla Frosting mixed with Matcha Powder + Chlorophyll drops. Top with Coconut Shavings.
  4. Vanilla Flower Donut: Vanilla Frosting. Decorate with a festive flower. (take off flower before consuming, unless an edible flower!)
  5. Coco Lemon Donut: Vanilla Frosting. Top with Lemon Zest + Coconut Shavings.
  6. Blueberry Lemon Granola Donut: Vanilla Frosting mixed with Blueberry Jam. Top with Lemon Zest + Granola.
  7. Blueberry Ombre Donut: Vanilla Frosting mixed with Blueberry Jam. Increase amount of blueberry jam to create darker shade as you go.
  8. Blueberry Flower Donut: Vanilla Frosting mixed with Blueberry Jam. Decorate with a festive flower. (take off flower before consuming, unless an edible flower!)
