English Tea Sandwiches

Fresh floral, floral vibes and crisp, bright flavors— things we love about spring and High Tea! In the spirit of spring and Mother's Day, we decided to put a Purely twist on the British classic with the help of some influencers from the Purely community. These English Tea Sandwiches by Marie Reginato (AKA @marie.reginato) are the perfect savory compliment to any sweet treats you may be whipping up for Mother's Day.
Cucumber and Dill English Tea Sandwiches
Makes 4 mini sandwiches
vegan // gluten-free (based on bread choice)
Ingredients
1/4 - 1/3 cup vegan cream cheese, divided
1 teaspoons fresh dill, roughly chopped
1 teaspoon fresh chives, roughly chopped
Dash of garlic powder
1/2 cucumber, thinly sliced
4 loaves sliced bread of your choice, crusts removed (each sandwich makes 2 mini ones - split in half)
Sea salt
Directions
1. Mix the cheese, herbs, garlic and sea salt in a small bowl.
2. Spread bread with herbed cheese and then layer on one the cucumber slices.
3. Top with a few extra sprinkling of fresh herbs and the other slice of bread. Enjoy!
Smoked Salmon English Tea Sandwiches
Makes 4 mini sandwiches
gluten-free (based on bread choice)
Ingredients
1/4 - 1/3 cup vegan cream cheese, divided
1 teaspoons fresh dill, roughly chopped
3 slices smoked salmon
Squeeze of lemon juice
1 teaspoon capers, roughly chopped
4 loaves sliced bread of your choice, crusts removed (each sandwich makes 2 mini ones - split in half)
Sea salt
Directions
1. Mix the cheese, herbs and sea salt in a small bowl.
2. Spread bread with herbed cheese and then layer on one the smoked salmon and a light squeeze of lemon juice.
3. Top with a few extra sprinkling of fresh herbs and the other slice of bread. Enjoy!
