Chocolate covered strawberries… reimagined! These cookies are gluten-free and vegan, with a deliciously creamy cashew filling.

CHOCOLATE STRAWBERRY GRANOLA COOKIES

ingredients

COOKIE - 

1 8oz Chocolate Sea Salt Probiotic Granola

1/3 cup coconut oil

CASHEW CREAM-

 1 1/2 cup soaked cashews (3hrs)

1/3 cup coconut oil

1/3 cup honey

2-3 strawberries, option to add more for brighter pink and more flavor

instructions

For the crust, blend granola and oil together in blender or food processor. Form into small balls and press down in the center to form a cookie shape. Place in freezer for at least 30-45 minutes to harden while making the cashew cream. For the filling, blend it all up until smoothie and pipe cream on top of each cookie. Top with fresh strawberries and chia seeds and enjoy!
