Grain-Free Cinnamon Waffles

Waffles are pretty much just a delicious vessel for toppings, right?! In this case, @baranbakery whipped up a creamy (dairy-free!) cinnamon icing to drizzle on this mouthwatering stack.
1/4 cup full fat coconut milk
1/4 cup maple syrup
1/4 tsp cinnamon
1/2 cup olive oil
1/2 cup water
2 large eggs
2 cups Purely Elizabeth Grain-Free Protein Pancake Mix
1 tsp cinnamon
To make the cinnamon icing, melt the coconut milk to make mixing it easier and mix it with the maple syrup and cinnamon.
2. Freeze the icing for a few minutes to thicken it up while the waffles are being made.
3. To make the waffles, whisk together the oil, water and eggs until they’re well combined, and then lightly fold in the pancake mix and the cinnamon.
4. Use about 1/3 cup of batter for each waffle and cook according to the waffle maker, until they’re golden brown and a little crispy
5. Drizzle with the cinnamon icing over the waffles and serve them fresh.
