Grain-Free Gingerbread Pancakes

Your favorite gingerbread cookies... but pancakes. The talented @marie.reginato took all of the warming spices of this classic holiday treat and transformed them into a healthy breakfast!
1 cup Purely Elizabeth Grain-Free Pancake Mix
1/4 cup olive oil
1/3 cup water
1.5 tbsp coconut sugar
1 tsp ground ginger powder
2.5 tbsp molasses
1.5 tsp cinnamon
Dash of allspice
Small handful of both white and dark chocolate chips
Pinch of sea salt
Extra white and dark chocolate chips, coconut maple syrup, whipped cream, pomegranate seeds and banana slices
1. Add all the ingredients into a mixing bowl and whisk until combined.
2. Cook the batter on a lightly greased sauté pan on medium-low heat. Flip the pancakes to cook on the opposite side once you see bubble form on the surface, about 1 minute. Flip carefully and cook until the pancakes are cooked through and golden brown on both sides.
3. Top with whatever toppings you’d like and enjoy!
