One of my favorite summer activities is gardening. I have an assortment of fruits and veggies that I grow in my backyard here in Boulder, and I love incorporating all the fresh produce in recipes. Last night I made this galette using my homegrown heirloom tomatoes, and IT WAS SO GOOD.

Grain-Free Heirloom Tomato Galette

gluten-free Ingredients: 1 1/2 cups almond meal 1/3 cup coconut flour 1/2 cup tapioca flour 1/4 cup arrowroot powder 1/2 tsp sea salt 2 eggs 1/2 cup vegan or grass fed butter, 1 tbsp for crust Toppings: Heirloom tomatoes, sliced Majestic Garlic Spread Parmesan Cheese Instructions: Preheat oven to 350°F. In a food processor, combine dry crust ingredients. Pulse a few times. Add butter and pulse until combined and crumbly. Add eggs, pulsing to combine to form a dough consistency. On parchment paper, roll out dough to a 1/2″ thick circle. Place parchment paper on baking sheet. Spread garlic spread in the center of the dough. Arrange slicedtomatoes on top. Sprinkle withparmesan cheese. Fold the sides of the pastry, enclosing thetomatoes. Brush the crust with the remaining 1 tbsp of butter, brush the crust. Bake for 45 minutes.
