Granola Crusted French Toast
I like my French Toast extra crunchy... turns out our Original Ancient Grain Granola does the trick! Head over to our IGTV to make these with me.
- 2 cups Purely Elizabeth Original Ancient Grain Granola
- 1/2 cup almond milk
- 2 eggs
- 1 tsp vanilla
- 1 tsp cinnamon
- 6 slices day old sourdough bread, cut 1 inch thick
- 1 tbsp coconut oil
In a food processor, pulse granola until broken into small pieces. Pour into a shallow bowl. In a mixing bowl, whisk together almond milk, eggs, cinnamon and vanilla. Dip slices of bread into egg mixture, turning to coat. Place bread into granola, pressing to stick on both sides. Preheat a griddle or frying pan over medium heat. Add coconut oil. Place bread on pan and and cook for about 4 minutes per side. Repeat with remaining slices of bread. Serve with maple syrup and fresh berries.
