An all American classic with a Purely twist!
Our friend, Helen Au of @astepfullofyou, created this delicious Pink Lemonade Granola Tartlet recipe that we are obsessing over. Made with our Original Ancient Grain Granola, these tartlets are the perfect summer treat.Purely Elizabeth Original Ancient Grain Granola 1/4 cup maple syrup 2 tbsp creamy unsalted peanut butter pinch of salt FILLING 1/2 cup raw unsalted cashews, soaked overnight in water 1/2 cup lemon juice 1/2 tbsp lemon zest 1/4 cup fresh strawberries 2 1/2 tbsp coconut oil, melted 1/4 cup coconut cream 2 tbsp maple syrup Add all the ingredients for the crust together in a blender and blend until crumbly. Divide the mixture into 2 tartlet pans, pressing on the sides until a crust is formed. Place in refrigerator. Combine all the ingredients for the filling and add to blender. Blend until smooth. Divide the fillings between the two tartlet pans. Refrigerate for 2 hours. Enjoy!
