Granola Waffles

What better way to celebrate Waffle Wednesday than with these Gluten-Free Granola Waffles topped with some homemade blueberry sauce? This recipe is for all of our granola lovers out there, because sprinkling some on top just never seems like enough.
Ingredients
For waffles:
1/2 cup olive oil
1/2 cup water
2 large eggs
2 cups Purely Elizabeth Pancake and Waffle Mix
1/2 cup Purely Elizabeth Maple + Almond Butter Granola
For toppings:
1 cup Fage Greek Yogurt
1 1/4 Blueberries
1/4 cup coconut sugar
1/4 teaspoon vanilla

Directions
1) To make the waffles, whisk together the oil, water and eggs until they’re well combined, and then lightly fold in the pancake mix and the granola.
2) Pour mix to make 4'' waffles.
3) Place 1 1/2 cups blueberries in a small saucepan and add coconut sugar and vanilla. Heat over medium-high heat until mixture comes to a low boil..
4) Top waffles with greek yogurt, blueberries and granola. Enjoy!
