If you follow a number of food accounts on Instagram, there is a GOOD chance that you’ve been seeing these “Cheesecake” Bars all over your feed. Created by wonderful @dani_nemeh, these bars are not only tasty but are also vegan, gluten-free… I mean does it get any better than that?

The recipe lends itself to a lot of experimentation and creativity, so here’s my version of her bars made with PITAYA!

Pitaya Cheesecake Bars

gluten-free, vegan CRUST: 1 bag Purely Elizabeth Maple Walnut Probiotic granola 1/3 cup coconut oil Blend and press into baking pan (8 x 8). CHEESECAKE: 1 1/2 cup soaked raw cashews 1/3 cup coconut oil 1/3 cup @philosophielove superfoods honey juice of 1 lemon 1 tbsp pure vanilla extract 1 tbsp pitaya powder Blend all ingredients (except pitaya powder) and separate into two. In one mixture, add the pitaya powder to create the pink layer. Pour the white layer over the crust, followed by the pink layer. Freeze for at least 3 hrs. Hope you enjoy!
