Layered Pumpkin Parfait

Fall is in full swing and this Layered Pumpkin Parfait is really helping us settle into all the hygge vibes. Featuring rich maple syrup, heartwarming cinnamon, and toasted pumpkin seeds, this might just be your go-to snack this season!

2 cups vanilla yogurt, of choice
1/4 cup pumpkin purée
1 tbsp maple syrup
1/2 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp allspice
1/8 tsp nutmeg
Purely Elizabeth Pumpkin Cinnamon Ancient Grain Granola
Optional toppings: toasted pecans and pumpkin seeds
1. Take half of the yogurt (1 cup) and place in a small bowl with the pumpkin purée, maple syrup, vanilla extract, cinnamon, allspice and nutmeg. Whisk together until spices and pumpkin purée are evenly incorporated.
2. Prepare the parfait by layering granola on the bottom of the cup, followed by pumpkin yogurt. Layer the plain yogurt on top of the pumpkin layer. Repeat process. Top with Purely Elizabeth Pumpkin Cinnamon Ancient Grain Granola and optional pecans and pumpkin seeds.
