Lemon Chia Blender Oatmeal Pancakes

Easily add to some fiber into your day with these delicious Lemon Chia Blender Oatmeal Pancakes. It's stacked with delicious and nutritious ingredients and flavors.

INGREDIENTS
1 cup Purely Elizabeth Original Superfood Oatmeal
1 ripe banana, medium
1 egg
½ cup almond milk
1 tbsp lemon juice
1 tbsp lemon zest
Pinch sea salt
1 tsp chia seeds
DIRECTIONS
1. Place all the ingredients into a blender and blend until smooth. Let the batter sit for 5 minutes.
2. Heat a pancake griddle to low-medium heat and prepare with non-stick spray.
3. Cook the
pancakes ¼ cup at time until golden brown and cooked through, about 5-6 minutes.
4. Serve with
fresh lemons and maple syrup.
*Note - these pancakes will be dense if you don’t cook them slowly on low heat.
