Vegan No Bake Lemon Blueberry Cheesecake

INGREDIENTS

1 cup Purely Elizabeth Original Superfood Oatmeal
1 ripe banana, medium
1 egg
½ cup almond milk
 1 tbsp lemon juice
 1 tbsp lemon zest
Pinch sea salt
1 tsp chia seeds

DIRECTIONS

1. Place all the ingredients into a blender and blend until smooth. Let the batter sit for 5 minutes.
2. Heat a pancake griddle to low-medium heat and prepare with non-stick spray.
3. Cook the pancakes ¼ cup at time until golden brown and cooked through, about 5-6 minutes.
4. Serve with fresh lemons and maple syrup.

*Note - these pancakes will be dense if you don’t cook them slowly on low heat.
