Maple Cinnamon Sweet Potato Waffles
recipe inspired by Monique of Ambitious Kitchen gluten-free ingredients 1/2 cup sweet potato, cooked 2 large eggs 1 cup Purely Elizabeth Original Superfood Oats 1 tbsp maple syrup 2 tsp baking powder 1 tsp ground cinnamon 1/4 tsp nutmeg 1/8 tsp salt 1 tsp vanilla extract 1/2 cup greek yogurt toppings: fresh blueberries, Purely Elizabeth Vanilla Almond Butter Grain-Free Granola directions Preheat waffle iron. Place all ingredients in a high powered blender and blend until batter is smooth. Batter will be somewhat thick. Spray waffle iron with nonstick cooking spray and cook according to waffle iron directions (about 3-4 minutes). Makes 2 large waffles. Top with maple syrup, granola, blueberries.
