Mocha Dark Chocolate Chip Pancakes

These Mocha Dark Chocolate Chip Pancakes are perfect for those who want their breakfast with a buzz! Plus, they’re packed with flavor AND protein, thanks to our Grain-Free Collagen Pancake + Waffle Mix.
Ingredients
1 ½ cups Purely Elizabeth Collagen Protein Pancake + Waffle Mix
2 tsp espresso powder
3 eggs
⅓ cup coconut oil
⅓ cup coconut milk
⅓ cup dark chocolate chips
Topping:
Dark chocolate chips
Maple Syrup
Coconut Whipped Cream
Directions
Add the pancake mix to a mixing bowl along with the espresso powder. In another bowl, whisk together the eggs, coconut oil and coconut milk. Add the wet ingredients to the dry and stir until the batter comes together. Fold in the chocolate chips.
Prepare a non-stick skillet with coconut oil or non-stick spray and turn on medium-low heat. Cook the pancakes ⅓ cup of batter at a time until golden brown. Flip and cook the other side until golden brown. Serve with toppings.
