Happy Halloween everyone! So today is definitely a day where the sugary treats are everywhere, and it can be hard to resist chocolate on a day like today… We are only human! Instead of going crazy trying to resist everything, why not go ahead and treat yourself?! But of course, do it purely.

My favorite candy is peanut butter cups. They remind me of a recipe my aunt used to make when I was younger. However, in order to avoid cavities, calories, and MASS amounts of sugar, I now choose Justin’s healthier option for a chocolatey, peanut butter treat.

Here is a recipe from our Eating Purely Cookbook which is a healthy twist on my aunt’s recipe featuring Justin’s Peanut Butter Cups. So go ahead treat yourself and put all those peanut butter cups to good use:

Peanut Butter Cup Cookies

vegetarian, gluten-free

1 cup peanut butter

1 cup coconut sugar

1 egg

1 tsp baking soda

4 Justin’s Peanut Butt Cups, cut into quarters (or 8 of the smaller Halloween version, cut into halves)

Preheat oven to 350°F. Line a baking sheet with parchment paper. In a mixer, combine peanut butter, sugar, egg, and baking soda. Blend for 2–3 minutes until well combined. Roll into 1” balls. Add a piece of Justin’s Peanut Butter Cup on top of each. Bake for 10–12 minutes.
