Banana Bread Oatmeal 

Banana Bread Oatmeal

gluten-free // vegan

Ingredients
1 cup PE Superfood Oatmeal
½ tsp cinnamon
1 ripe banana, mashed
2 tbsp maple syrup
1 1/4 cup almond milk, unsweetened
Caramelized Banana Topping: 
1 tbsp coconut oil
1 tbsp maple syrup
1 banana, sliced (¼ inch)
Toppings:
Chopped pecans
Cinnamon
Drizzle of maple syrup 

Directions
1. Add the coconut oil and maple syrup to a medium sized skillet and turn on medium-low heat. Add the banana slices to the hot pan and cook for 2-3 minutes on each side and golden brown.
2. Meanwhile, in a microwave safe bowl, stir together the superfood oatmeal, cinnamon, banana, maple syrup and almond milk. Microwave for 1 minute, stir and then continue to microwave for an additional minute.
3. Top the cooked oatmeal with caramelized bananas, chopped pecans, a dash of cinnamon and a drizzle of maple and serve.  

Baked Oatmeal with Cranberry Apple Sauce  

Cranberry Oatmeal

Ingredients
1 tbsp ground flax meal
3 tbsp water
1 bag PE Superfood Original Oatmeal
¾ cup pecans, roughly chopped
¾ cup pumpkin seeds
¼ cup almond slices
1 tsp cinnamon
½ tsp salt
¼ tsp nutmeg
¼ cup coconut oil, melted (extra for coating the dish)
⅓ cup maple syrup
1 ½ cups almond milk, unsweetened
1 tsp vanilla extract 
Cranberry Apple Sauce:
2 gala apples, peeled and chopped
½ cup fresh cranberries or frozen
¼ cup maple syrup
1 cinnamon stick
Pinch sea salt
Greek yogurt for topping 

Directions
1. In a small bowl, combine the flax meal and water and then set it aside to gel for about 10 minutes.
2. In a large mixing bowl, toss together the PE Original Oatmeal, pecans, pumpkin seeds, almond slices, spices and salt.
3. In another bowl, combine the coconut oil, maple syrup, almond milk and vanilla extract. Stir in the flax mixture. Add the wet ingredients to the dry and stir until a batter forms.
4. Coat a 6 ½ x 11 inch dish with melted coconut oil. Transfer the batter to the dish and bake it for 25-30 minutes and cooked through. Meanwhile, place the peeled and chopped apples, cranberries, maple syrup, cinnamon and salt into a sauce pan and turn on medium heat. Cook for 15-20 minutes and the apples are tender. Remove the cinnamon stick.
5. Use a potato masher or an immersion blender to blend together the apples and cranberries. Once the baked oatmeal is done, let it cool for 10-15 minutes before cutting into slices and serving with greek yogurt and cranberry apple sauce. 

Pumpkin Cheesecake Oatmeal   

Pumpkin Swirl Oatmeal

Ingredients
Pumpkin Cheesecake Swirl:
½ cup greek yogurt
2 tbsp pumpkin puree
1 tbsp maple syrup
½ tsp cinnamon
Pinch nutmeg
Pinch sea salt 
Oats:
1 cup PE Original Superfood Oatmeal
1 tsp cinnamon
Pinch nutmeg
1 ¼ cup almond milk
2 tbsp maple syrup  
Toppings:
Pecans
Pumpkin seeds
PE Almond Butter Granola 

Directions
1. In a bowl, combine the pumpkin cheesecake ingredients and then set it aside.
2. In a microwave safe bowl, combine the oats ingredients and microwave for 1 minute. Stir and microwave for an additional minute.
3. Swirl the pumpkin cheesecake into the oats and top with pecans, pumpkin seeds and almond butter granola.
