Peanut Butter Muesli Balls
We love just how versatile muesli can be. Sure, our Mango Almond Muesli (packed with ancient grains, superfood seeds, mango chunks, sliced almonds and juicy pineapple) is perfectly fine to eat with just milk or yogurt! But, it also makes for an excellent baking ingredient in cookies, pancakes, crisps, granola bars and energy bites.
Here we have a recipe for our ultra peanut buttery muesli energy bites! An ultra-satisfying snack, when you’re looking for something, hearty, slightly sweet and protein-packed. The best part is: they travel well. Throw them in your gym bag, lunch box or even a ziplock bag in your carry-on.

Peanut Butter Muesli Balls
Ingredients:
3/4 cup peanut butter
3 tbsp maple syrup
2 tbsp coconut sugar
1 tbsp coconut oil
2 cups Mango Almond Ancient Grain Muesli
Directions:
In a small sauté pan, combine peanut butter, maple syrup, coconut sugar and coconut oil over low to medium heat. Stir and cook for 3-5 minutes, until mixture begins to bubble. In a large bowl, add muesli, pour in peanut butter sauce and stir to combine and evenly coat. With your hands, roll into balls and place in a container. Freeze and enjoy!
