Pear, walnut, and ginger come together beautifully in this winter version of a fruit crisp. Serve warm with some ice cream, cuddle by the fire, and enjoy a perfect winter’s eve.

Pear, Walnut + Ginger Crisp

4 Bartlett pears, sliced
1 tbsp ginger, minced
1 lemon, juiced
1/3 cup coconut sugar
Toppings:
1 cup Purely Elizabeth Superfood Original Oatmeal
1/2 cup walnuts, chopped
1/3 cup coconut sugar
5 tbsp coconut oil
1/4 cup millet flour
Preheat oven to 350℉. In a bowl, combine pears, ginger, lemon, and coconut sugar. Meanwhile, in a separate bowl, combine topping ingredients. Pour fruit mixture into a 8 X 8 pan and sprinkle topping evenly. Bake for 30 minutes or until top is browned and fruit is bubbling. Serve with ice cream on top!
