Most people think of oatmeal as a sweet breakfast. And while I do enjoy my oats topped with nut butter and fruit, my go-to way to eat oatmeal is savory. Here’s one super satiating breakfast.

Savory Oatmeal with Arugula, Cherry Tomatoes + Pine Nuts

gluten-free

ingredients

1/3 cup Purely Elizabeth Superfood Oatmeal

1 organic cage-free egg

handful of arugula

2 tbsp pine nuts

2 tbsp shaved parmesan

1/4 cup cherry tomatoes

black pepper to taste

instructions

Cook oatmeal according to packaging instructions. Place in a large bowl. Cook egg however you like -- my favorite it sunny side up! Lightly sauté the arugula + tomatoes. Top oatmeal with the veggies, egg, pine nuts, parmesan + pepper.
