St. Paddy’s Day Mermaid Toast

Scrolling through the Internet and our social media feed, we see a lot of the usual foodie favorites on the daily: yogurt bowls, #wafflewednesday, thick smoothies, macro bowls, loaded sweet potatoes and more! Which we never really tire of seeing and drooling over… But every once in a while something pops up that makes us stop and say, “WOW WOW WOW, that’s new.”

That’s exactly how we felt when the enchanting and magical Unicorn + Mermaid Toasts came on the scene. We saw @vibrantandpure ‘s Mermaid Toast and were immediately inspired and knew just what to make for a St. Paddy’s Day treat.

All the shades of green and pretty as can be, we can definitely vouch that with the right toppings, this trend is worth the hype. Mermaid Toast | purely elizabeth


PURELY MERMAID TOAST

2 gluten-free slices of bread
Kite Hill Cream Cheese Style Spread
Chlorophyll drops (or Spirulina), we got ours from Whole Foods
Purely Elizabeth Original Granola
coconut shavings
sprinkles or edible glitter

Side of: Juice Served Here Green Party

Toast bread until desired toasty-ness. Meantime in 4 separate bowls place a dollop of “Cream Cheese.”
Bowl 1: 0 drops of Chlorophyll
Bowl 2: 1-3 drops of Chlorophyll
Bowl 3: 3-5 drops of Chlorophyll
Bowl 4: 6-8 drops of Chlorophyll
(really just gradually add drops until it’s a shade that you want– get creative :) )

Spread each color onto the toast in an ombre, diagonal design or however you feel! (yes, you are going to feel like a painter and it’s SO FUN). Decorate the top of the toast with granola, coconut shavings, sprinkles + glitter.
