Take advantage of summer produce with this refreshing summer salad made with watermelon, olives, tomato and feta. A great side salad to any dish!

vegetarian + grain-free

1 medium watermelon, cut in cubes
2 cups cherry tomatoes, halved
2 Persian cucumbers, diced
1 cup kalamata olives, pitted
8 ounces feta, cubed

vinaigrette ingredients:
1/4 cup extra virgin olive oil
3 tablespoons balsamic vinegar
1 lemon, juiced
2 teaspoons maple syrup
1 cup fresh basil, chopped
salt and pepper to taste

In a large bowl, combine watermelon, tomatoes, cucumbers, olives and feta. To make the dressing, in a mason jar, combine all vinaigrette ingredients and shake until well combined. Drizzle vinaigrette over salad. Sprinkle with salt and pepper and let sit room temperature for 10 minutes to let flavors come together. Enjoy!
