Gluten-Free Chocolate Strawberry Cookies

If you’re a fan of our raw cheesecake bars then you’ll love these chocolate strawberry cookies. They are gluten-free, vegan and I made them with the same creamy cashew filling.

1 8oz Dark Chocolate Strawberry Superfood Granola + Reishi

1/3 cup coconut oil


1 1/2 cup soaked cashews (3hrs)

1/3 cup coconut oil

1/3 cup honey

2-3 strawberries, option to add more for brighter pink and more flavor

For the crust, blend granola and oil together in blender or food processor. Form into small balls and press down in the center to form a cookie shape. Place in freezer for at least 30-45 minutes to harden while making the cashew cream. For the filling, blend it all up until smoothie and pipe cream on top of each cookie. Top with fresh strawberries and chia seeds and enjoy!
