Our friend, Helen Au of @astepfullofyou, created this delicious Pink Lemonade Granola Tartlet recipe that we are obsessing over. Made with our Original Ancient Grain Granola, these tartlets are the perfect summer treat.

PINK LEMONADE NO-BAKE GRANOLA TARTLETS

vegan, gluten-free

CRUST

1 1/2 cup Purely Elizabeth Original Ancient Grain Granola

1/4 cup maple syrup

2 tbsp creamy unsalted peanut butter

pinch of salt

FILLING

1/2 cup raw unsalted cashews, soaked overnight in water

1/2 cup lemon juice

1/2 tbsp lemon zest

1/4 cup fresh strawberries

2 1/2 tbsp coconut oil, melted

1/4 cup coconut cream

2 tbsp maple syrup

Add all the ingredients for the crust together in a blender and blend until crumbly. Divide the mixture into 2 tartlet pans, pressing on the sides until a crust is formed. Place in refrigerator. Combine all the ingredients for the filling and add to blender. Blend until smooth. Divide the fillings between the two tartlet pans. Refrigerate for 2 hours. Enjoy!
