Grilled Zucchini Salad with Corn and Tomatoes

Side dishes are always our favorite part of any gathering. Savor the bright and fresh summer flavors of this Grilled Zucchini Salad with Corn and Tomatoes. It combines tender-crisp zucchini slices with sweet corn kernels, juicy tomatoes, peppery arugula, crumbled goat cheese and a homemade lemon garlic dressing that is super easy to make.

INGREDIENTS
Salad
2 large zucchini, quartered (length wise)
2 ears of corn, shucked
1 cup cherry tomatoes
3 cups arugula
Olive oil
Salt and pepper
1/4 cup goat cheese crumbles
Dressing
3 tbsp olive oil
2 tbsp lemon juice
1 tsp minced garlic
1 tsp oregano
Salt and Pepper
DIRECTIONS
1. Preheat the grill to 425 F and brush with oil. Drizzle oil over zucchini and corn. Season with salt and pepper.
2. Place the vegetables on the grill, flipping and tossing occasionally until tender. Chop the zucchini into half-inch pieces and cut the kernels off the cob.
3. Assemble the salad by placing the arugula, zucchini, corn and tomatoes into a large serving bowl.
4. Whisk together the dressing and toss with the salad. Sprinkle goat cheese and serve.
