Mango Sticky Overnight Oats

I've been turning to this Mango Sticky Overnight Oats recipe for breakfast lately, and it's the perfect thing to fuel me for my busy days. The combination of sweet mango, oats, and sesame seeds is just perfect.

Chill time: 1 hour, or overnight
INGREDIENTS
3/4 cup coconut milk
3/4 cup water
1/3 cup coconut sugar
1/2 tsp sea salt
2 servings Purely Elizabeth Original Superfood Oats
1 sweet, ripe mango, sliced
Sesame seeds
Toasted sesame oil
DIRECTIONS
1. In a medium saucepan, combine coconut milk, water, coconut sugar and sea salt. Bring to a simmer. Reserve 1/4 cup of the coconut milk sauce.
2. Add oats and cook for 2-3 minutes until creamy and thick.
3. Transfer oats to a large, shallow bowl and place in the refrigerator for 1 hour to set.
4. Once chilled, remove from the refrigerator, drizzle the reserved coconut milk sauce over the oats, top with sliced mango, sesame seeds and sesame oil. Enjoy!
