Oatmeal Pancakes
Gluten-Free, Vegetarian // Makes 2 Large Pancakes or 6 Medium Pancakes
Inspired by the classic Australian breakfast, these pancakes are made with our Original Superfood Oats and topped with delicious fresh fruit and our Original Ancient Grain Granola.
Start your morning nice and slow with these delicious pancakes!

INGREDIENTS
3/4 cup unsweetened almond milk, plus more as needed
1/3 cup whole milk Greek yogurt
2 large eggs
2 tablespoons maple syrup, plus more for serving
1 teaspoon vanilla extract
1 pouch Purely Elizabeth Original Superfood Oat Pouch
1 1/2 teaspoons baking powder
1/2 teaspoon cinnamon
1 teaspoon sea salt
2 tbsp coconut oil
Fresh fruit, for serving
Purely Elizabeth Original Ancient Grain Granola, for topping
DIRECTIONS
1. In a blender, place the almond milk, yogurt, egg, maple syrup, vanilla extract, oats, baking powder, cinnamon and sea salt and blend until smooth. Transfer mixture to medium bowl and let sit for 5 minutes to thicken slightly. 2. Meanwhile, set a skillet over medium heat and brush lightly with coconut oil. Using a 1 cup measuring, pour batter into the pan, leaving an inch in between pancakes. Cook pancakes for 2-3 minutes per side, or until golden brown.
3. Serve pancakes with maple syrup, fresh fruit and granola!
