Passion Fruit Coconut Popsicles

Gluten-Free // Makes 8-12 popsicles depending on mold size

These 6-ingredient Passion Fruit Coconut Popsicles are perfect to stay cool this summer. We chose to add our Original Ancient Grain Granola for a salty-sweet crunch.

Blended Chia Raspberry Oat Pudding

INGREDIENTS

1 3/4 heavy cream
3/4 coconut milk
3/4 cup cream of coconut
Pinch of salt
4-5 passion fruit
1/3 cup Purely Elizabeth Original Ancient Grain Granola

DIRECTIONS

1. Cut open passion fruit and scoop out the seeds, juice and pulp. Pour a little into each popsicle mold. 
2. Mix together heavy cream, coconut milk, cream of coconut and a pinch of salt. Whisk until combined. 
3. Distribute liquid evenly between molds. 
4. Sprinkle Purely Elizabeth Granola on top, add lid, and insert popsicle sticks. Place in feezer for ~5-6 hours. Enjoy!
