There’s always that one salad I end up making on repeat each season — and this is the one for fall. My Kale Salad with Apples, Feta, Mint & Honey-Sesame Dressing is fresh, crunchy, and deeply nourishing, the kind of meal that feels like a reset whenever I need it most. I love to top it with grilled salmon for a protein-packed dinner that leaves me feeling grounded and energized.
Ingredients
1 bunch lacinato kale, stems removed, leaves finely chopped
1 crisp apple (Honeycrisp, Pink Lady, or Fuji), thinly sliced
⅓ cup crumbled feta
¼ cup fresh mint leaves, torn
3 tbsp toasted sesame seeds
¼ cup toasted walnuts, chopped
Dressing
3 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
1 tsp honey
1 tsp dijon mustard
1 tsp sesame oil
salt and pepper
