I’ve been cooking out of my kitchen remodel lately, which means keeping things as simple — and as mess-free — as possible. One-pan dinners have officially become my saving grace: minimal cleanup, maximum flavor. In this bowl, everything roasts together on a single sheet pan — golden delicata squash, crisped kale, caramelized onion, and maple-Dijon salmon that turns perfectly glossy in the oven. I toss it all with warm rice, a little Parmesan cheese, and finish with toasted walnuts for that satisfying mix of textures. It’s cozy, functional, and the perfect weeknight ritual as the days start to cool.
Ingredients
2 salmon fillets
1 delicata squash, halved, seeds removed, sliced into half-moons
