This cookie was inspired by a pistachio rose matcha I had recently — and now I’m obsessed with this flavor combo. The toasted nuttiness of pistachios, rich dark chocolate, a hint of rose… it’s a vibe.

These cookies feel elegant and bakery-worthy, but they’re secretly nutrient-rich with almond flour, oat flour, and ghee — which I love using not just for flavor but for the digestive and hormone-supporting health benefits. They freeze beautifully if you don’t finish the batch first (good luck with that).

 

Ingredients (Makes 12 Cookies)

1 ½ cups almond flour

½ cup oat flour

¼ tsp baking soda

¼ tsp fine sea salt

½ cup coconut sugar

¼ cup maple syrup

1 large egg

⅓ cup ghee, melted and slightly cooled

1 tsp vanilla extract

½ cup Hu dark chocolate chunks

⅓ cup roasted pistachios, chopped

1–2 tbsp dried edible rose petals, lightly crushed

Flaky sea salt, for topping
