Ingredients

1/2 bag of Purely Elizabeth Double Chocolate Cookie Granola

2 Tbsp melted vegan butter

2 pints Ice Cream

1/2 cup raspberries, sliced

1/2 cup strawberries, sliced

Directions

  1. Take the ice cream out of the freezer 5 minutes before preparing.
  2. Line a loaf pan with plastic wrap and set aside.
  3. Place the granola and melted butter into a food processor and blend until small crumbles form.
  4. Press the blended granola into the bottom of the prepared pan.
  5. Scoop ice cream over the granola layer and then use a rubber spatula to spread out the ice cream in an even layer.
  6. Top with fresh berries and add another layer of ice cream.
  7. Cover with plastic and freeze overnight. Cut into slices and serve immediately.
