Squash Toast with Goat Cheese and Caramelized Onions

With Thanksgiving right around the corner, we're sharing one of our favorite fall recipes that is sure to be a delicious addition to any holiday dinner or gathering this season. Savory squash paired with the sweetness of caramelized onion make this toast a flavorful and fall-inspired appetizer that you'll come back to time and time again.

Ingredients

1 medium squash, peeled and cubed

8 tbsp olive oil, separated

Salt and pepper to taste

1 yellow onion

1 french baguette

3-4oz goat cheese

Fresh thyme

Directions

  1. Preheat the oven to 450 F and place the cubed squash on a baking sheet. Toss with 4 tablespoons of olive oil and season with salt and pepper. Roast for 20-25 minutes until squash is tender. Use a fork to mash.

  2. While the squash is roasting, thinly slice the onion. Add 3 tablespoons of olive oil to a large frying pan over medium heat. Add the onion and season with salt. Cook the onion, stirring occasionally until the onions are caramelized. Remove from heat.

  3. Slice the baguette into serving sized pieces and toast in a frying pan and 1 tablespoon olive oil.

  4. Add a thin layer of goat cheese onto each slice of toast, top with mashed squash, caramelized onions, fresh thyme and serve.
