Preheat the oven to 450 F and place the cubed squash on a baking sheet. Toss with 4 tablespoons of olive oil and season with salt and pepper. Roast for 20-25 minutes until squash is tender. Use a fork to mash.

While the squash is roasting, thinly slice the onion. Add 3 tablespoons of olive oil to a large frying pan over medium heat. Add the onion and season with salt. Cook the onion, stirring occasionally until the onions are caramelized. Remove from heat.

Slice the baguette into serving sized pieces and toast in a frying pan and 1 tablespoon olive oil.

Add a thin layer of goat cheese onto each slice of toast, top with mashed squash, caramelized onions, fresh thyme and serve.
