Add the almond milk, oatmeal and 2 tablespoons of maple syrup to the small pot over low/medium and heat cook for 3-4 minutes.

Meanwhile, add remaining 1 tablespoon of syrup, coconut oil and apples to a small saucepan and cook over medium heat for 4-5 minutes.

Transfer the oatmeal to two serving bowls and top with cooked apples and fresh figs. Drizzle with more maple syrup or honey if desired.
