- In a small saucepan, combine the strawberries, coconut sugar and salt. Set pan over medium heat and allow mixture to simmer for 3-5 minutes or until the strawberries begin to break down into a chunky sauce. Once the mixture has reached a sauce consistency, remove from heat. Set aside to prep the oatmeal.
- In another saucepan combine the oatmeal, almond milk and cocoa powder. Cook 2-3 minutes until the oats have softened and the mixture has thickened. Add additional almond milk if too thick.
- Add maple syrup and remove from heat.
- Melt chocolate chips and set aside.
- Place the oatmeal into a bowl, top with the warm strawberries and drizzle with chocolate. Option to add more fresh strawberries.
