In a bowl, stir together all of the vanilla layer ingredients including the chia seeds, almond milk, vanilla extract and maple syrup. Cover and refrigerate overnight.

In a separate bowl, stir together the remaining ingredients including the chia seeds, espresso shots, cocoa powder, almond milk, and maple syrup. Cover and refrigerate overnight. (Make sure the coffee is lukewarm).

In a mason jar or coupe, alternate layers between the chocolate chia pudding, yogurt, and vanilla chia pudding until full.
- For the last layer, add yogurt, cocoa powder, and shaved dark chocolate if desired.
