Viral Tiramisu Chia Pudding

This recipe has been all over social media, so of course, we had to make it. This chia pudding captures all of the rich, indulgent flavors of a classic tiramisu but is full of protein and ridiculously easy to make.

Ingredients

Vanilla Layer

1/4 cup chia seeds

1 cup almond milk

1 tsp vanilla extract

1 tbs maple syrup

Chocolate Layer

1/4 cup chia seeds

1/4 cup espresso or coffee

1/4 cup unsweetened cocoa powder

3/4 cup almond milk

1 tbs maple syrup

Yogurt Layer

1 cup yogurt of choice

1/2 tsp vanilla extract

To Serve

1/2 tbs unsweetened cocoa powder

1 tbs shaved dark chocolate

 

Directions

  1.  In a bowl, stir together all of the vanilla layer ingredients including the chia seeds, almond milk, vanilla extract and maple syrup. Cover and refrigerate overnight.

  2. In a separate bowl, stir together the remaining ingredients including the chia seeds, espresso shots, cocoa powder, almond milk, and maple syrup. Cover and refrigerate overnight. (Make sure the coffee is lukewarm).

  3. In a mason jar or coupe, alternate layers between the chocolate chia pudding, yogurt, and vanilla chia pudding until full.

  4. For the last layer, add yogurt, cocoa powder, and shaved dark chocolate if desired.
