Ever wonder why Marry Me Chicken is so popular? Hint: It's not just the catchy name.  Tender, juicy chicken and a creamy sun-dried tomato sauce come together in this one-pot dish that is sure to become one of your weeknight favorites. 

Ingredients

450g gluten free penne pasta

3 tbsp olive oil

4 chicken breasts

Salt and pepper to taste

1 cup sun dried tomatoes, chopped

2 cloves garlic, minced

2 tbsp paprika

1 tsp thyme

½ tsp oregano

Pinch chili flakes

1 can coconut milk

¼ cup fresh basil

 

Directions

  1. Use a meat mallet to pound the chicken so they are all evenly sized. Season chicken generously with salt and pepper. 

  2. In a large skillet, heat olive oil over medium heat. Add the chicken and cook each side for 4-5 minutes until cook through. Remove from the heat and place on a cutting board.

  3. In the same pan, add the tomatoes and garlic. Cook for 1-2 minutes until fragrant.

  4. Add spices and coconut milk to the pan and stir to bring to a simmer. Add salt and pepper to taste. 

  5. Cook the pasta accordingly. Once cooked, add in the pasta and toss until coated. Slice the chicken into small pieces and then add into pasta mixture. Serve with fresh basil.
