Use a meat mallet to pound the chicken so they are all evenly sized. Season chicken generously with salt and pepper.

In a large skillet, heat olive oil over medium heat. Add the chicken and cook each side for 4-5 minutes until cook through. Remove from the heat and place on a cutting board.

In the same pan, add the tomatoes and garlic. Cook for 1-2 minutes until fragrant.

Add spices and coconut milk to the pan and stir to bring to a simmer. Add salt and pepper to taste.
- Cook the pasta accordingly. Once cooked, add in the pasta and toss until coated. Slice the chicken into small pieces and then add into pasta mixture. Serve with fresh basil.
