Valentine's Day is just around the corner, and what better way to celebrate than with a decadent dessert?

This year, we're ditching the traditional box of chocolates and indulging in these delicious molten lava cakes. They are rich, gooey, and oh-so-chocolatey, but with a secret: they're both dairy-free and gluten-free!

Don't forget to top with fresh raspberries!

Ingredients

⅔ cup chocolate chips (Preferably Hu Kitchen)

⅓ cup coconut oil, melted

2 organic eggs, room temperature

⅓ cup coconut sugar

⅓ cup almond flour

⅛ tsp salt

¼ tsp baking powder

2 squares chocolate (Preferably Hu Kitchen)

Fresh Raspberries for topping

 

Directions

  1. Preheat the oven to 425 F and prepare 2 ramekins (5-6 ounce) with non-stick spray.

  2. In a bowl, melt the chocolate chips and coconut oil together. Whisk in the eggs, sugar, almond flour, salt and baking powder until the batter comes together.

  3. Use a cookie scooper to scoop batter into the ramekins. Press the chocolate into the center and then cover with more batter.

  4. Bake the lava cakes for 11-12 minutes. Let cool for 1-2 minutes before flipping onto a plate and serving with fresh raspberries.
