Preheat the oven to 425 F and prepare 2 ramekins (5-6 ounce) with non-stick spray.

In a bowl, melt the chocolate chips and coconut oil together. Whisk in the eggs, sugar, almond flour, salt and baking powder until the batter comes together.

Use a cookie scooper to scoop batter into the ramekins. Press the chocolate into the center and then cover with more batter.

Bake the lava cakes for 11-12 minutes. Let cool for 1-2 minutes before flipping onto a plate and serving with fresh raspberries.
