Ingredients

2 ripe peaches, pits removed and sliced

1 package halloumi cheese, sliced into 5 pieces

1⁄2 shallot, thinly sliced

1⁄2 cup fresh basil

1⁄2 cup fresh mint

Olive oil

Salt and pepper to taste

Directions

  1. Preheat the grill to 400 F (or heat a cast iron skillet with medium heat). 

  2. Brush with olive oil and place the halloumi slices on the grill, close the lid for 2-3 minutes, flip and grill for an additional 2-3 minutes.
  3. Cut the halloumi into small pieces and arrange on a serving dish along with the peaches, basil and mint.
  4. Drizzle with olive oil, balsamic glaze and salt and pepper. Serve.
