Ingredients

1⁄2 cup gluten free flour (1:1)

1⁄3 cup unsweetened cocoa powder 1⁄8 tsp salt

1 cup coconut sugar

1⁄2 cup + 2 tbsp butter or ghee

9oz dark chocolate chips

3 eggs, room temperature

1 tsp vanilla extract

1⁄2 cup Purely Elizabeth Chocolate Chip Cookie Granola

Directions

  1. Preheat the oven to 350 F and prepare an 8x8 inch pan with parchment paper.  

  2. In a heat proof bowl, add the coconut sugar, butter and chocolate chips. Cook in the microwave on high for 30 seconds, stir and cook another 30 seconds, stirring until smooth. Let cool for 5 minutes, before whisking in the eggs and vanilla extract.

  3. In a separate bowl, sift together the flour, cocoa powder and salt. Add the dry ingredients to the wet and combine. Fold in the Chocolate Chip Cookie Granola.

  4. Transfer the batter to the pan and bake for 20-22 minutes and remove from the oven. The brownies cool completely before cutting into slices and serving.
