Ingredients

½ cup butter, room temperature

¾ cup date sugar or coconut sugar

1 egg, room temperature

1 tsp vanilla extract

2 cups almond flour

¼ tsp baking powder

¼ tsp salt

½ cup Purely Elizabeth Double Chocolate Cookie Granola, broken into small pieces

½ cup mini chocolate chips

¼ cup crushed graham crackers

¼ cup mini pretzels

¼ cup potato chips

Directions

  1. Preheat the oven to 350 F and prepare a baking sheet with parchment paper.

  2. Using a stand alone mixer or handheld mixer, cream the butter and sugar together for 2 minutes.

  3. Add in the egg and vanilla extract and combine.

  4. Using a spatula, fold in the flour, baking powder and salt until the cookie dough comes together.

  5. Add in the granola, chocolate, crushed crackers, pretzels and potato chips and stir until well combined. 

  6. Separate the dough into 2” cookie dough balls and press them down halfway on the baking sheet.

  7. Bake the cookies for 8-9 minutes and golden brown. Let cool before serving.
